I know today is a famous holiday, Martin Luther King Day, but it also is a lesser known holiday; today is Gourmet Coffee Day!!
So in honor of such a fantastic obscure holiday (as well as the famous one!), I have, for you, a special recipe.
I took the base from Bullet Proof Coffee from the Bullet Proof Exec and altered it slightly. I do not have access to grassfed butter, but I do have access to Amish butter (which I believe to be grassfed, but I haven’t researched it). I use my favorite brand of coffee, simply because I cannot afford the Bullet Proof stuff! Lastly, I like my coffee slightly sweet.
So, while I was messing around with the recipe, I discovered that different types of coconut oil have different flavors. For this recipe, I recommend virgin or extra virgin coconut oil as they will give you the strongest toasted coconut flavor.
Now, you might be thinking coconut oil???? In your coffee????? BUTTER????? IN YOUR COFFEE??????? I ask you to take a moment to look up blender coffee or Bullet Proof Coffee. The theory is that if you consume healthy fats right away in the morning, you’ll have energy all day. I have drunk my coffee this way for a few months now and I can tell you, it does make a difference. It helps get me going in the morning and in the afternoon when I have my typical midday slump.
Healthier Almond Joy Coffee
In an individual blender cup, put:
1 tbsp virgin or extra virgin coconut oil
1 tbsp butter
1 heaping tbsp cocoa or cacao powder
1-2 tbsp of honey
1/4-1/3 c Almond milk
COFFEE!!!! to fill line
I have a Ninja blender with individual cups and that’s what I use to blend my coffee together. I HIGHLY recommend blending it because all the flavors will mix together smoothly and, huge bonus, you get this awesome frothy layer on top!
